bettyskitchen — September 19, 2009 — In this video, Betty demonstrates how to make her fabulous Bacon, Eggs, and Cheese Breakfast Casserole. You can start this the night before, and put it in the oven for a tasty and terrific start to your day!

Ingredients:

4 cups hot water
5.2 oz. package dried hash brown potatoes
5 eggs, well beaten
1 cup shredded Swiss cheese (You may substitute a different kind of cheese, if you like.)
½ cup cottage cheese
1 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon hot sauce
1 green onion, chopped
6 slices of bacon, cooked, drained, and crumbled
paprika (for sprinkling the top)
cooking oil spray

In a large bowl, place the entire 5.2 oz. hash brown mixture. Pour 4 cups hot water over the hash browns, and let stand for 10 minutes. Drain, and pat off any extra moisture with a paper towel. In a large bowl, combine 5 well-beaten eggs, 1 cup shredded Swiss cheese, ½ cup cottage cheese, 1 teaspoon salt, 1/8 teaspoon ground black pepper, 1/8 teaspoon hot sauce, and 1 chopped green onion. Add drained hash browns, and mix thoroughly. Pour mixture into a deep-dish pie plate that has been sprayed with cooking oil spray. Sprinkle with crumbs from 6 slices of cooked bacon and a dash of paprika. Cover with plastic wrap or aluminum foil and refrigerate at least 3 hours (or overnight). Bake, uncovered, at 350 degrees for about 30 minutes, or until mixture is set. (You can check for doneness by inserting a clean knife in the center, and it should come out clean.) Cut into wedges, and serve immediately. This breakfast goes well with cherry tomato halves or sliced tomatoes. I also served mine with freshly made hot cocoa. Delish!

bettyskitchen — September 18, 2009 — In this video, Betty demonstrates how to make her Mexican Style Cheese Spread. Its a superb mixture of sharp Cheddar cheese, sour cream, green onions, pimientos, and green chiles. It is colorful and inviting, and it is bursting with flavor!

Ingredients:

2 cups shredded sharp Cheddar cheese
½ cup sour cream
¼ cup butter or margarine, softened
2 green onions, sliced
2 oz. jar diced pimiento, drained
2 tablespoons chopped green chiles (I used the full 2 tablespoons, but you may find this too hot. You may start with 1 tablespoon, and after tasting, add more, if you like.)
restaurant style corn tortilla chips or assorted crackers

In a medium mixing bowl, combine 2 cups shredded sharp Cheddar cheese, ½ cup sour cream, and ¼ cup softened butter or margarine. Beat at medium speed with an electric mixer, until mixture is smooth. Stir in 2 sliced green onions, 2 oz. drained pimientos, and 1 to 2 tablespoons chopped green chiles (depending on your taste). This may be served at room temperature as a dip on corn tortilla chips, or you may cover and refrigerate it, and serve is as a spread on crackers (or corn chips). It is delicious, filling, and *very* easy to make! Youre sure to like it!

bettyskitchen — May 30, 2010 — In this video, Betty demonstrates how to make Cornbread and Veggie Salad. This is a delightful combination of baked corn muffin pieces, mayonnaise, green peppers, onions, celery, and tomatoes. The salad is topped with crispy bacon pieces. This salad looks beautiful and tastes wonderful!

Ingredients:

6 corn muffins (I used Jiffy muffin mix for these.)
1 cup mayonnaise
½ cup green bell pepper, chopped
¼ cup onion, chopped
½ cup celery, chopped
2 Roma tomatoes, chopped (You may use other types of tomatoes, and you may need only 1 tomato, if it is large.)
4 slices crisp bacon, chopped or crumbled
salt (optional), to taste
pepper (optional), to taste

Cut 4 slices of bacon into 1-inch pieces, and fry them in a skillet on top of the stove until crisp. (You may cook the bacon in the microwave, if you prefer.) Drain bacon pieces on paper toweling, and set aside. Use kitchen shears to cut each of the 6 baked corn muffins into 4 equal parts. Place the corn muffin pieces in a large mixing bowl. Add 1 cup mayonnaise, ½ cup chopped green pepper, ¼ cup chopped onion, ½ cup chopped celery, and 2 chopped Roma tomatoes. Add salt and pepper to taste. Mix gently, but completely. (Mixing the ingredients will cause the muffin pieces to break apart. If you start out with small pieces, the salad will turn to mush! ) Spoon Cornbread and Veggie Salad into a nice serving bowl, and top with crisp bacon pieces. I used to run around in my little boots and shouted this song when it rained.

I would make mud pies and then bring them in and bake them in my easy bake oven.

My dad was used to me making him little chocolate cakes.

I gave him my baked mud pie with a fork and he put it in his mouth…

Then spit it out.

He was busy watching TV . LOL

all I heard was him yell “MICHELLE!!!!”

thanks for adding me to your Twitter and telling me about your sisters video in english (the

rest of his tweets are in russian lol)

EdwardEdison is his twitter name.

I asked him if he’s related to Thomas Edison (one I fashion myself after in relation to scientific experiments using google, blogs and other silly things on the internet)

I’m a pioneer exploring the vast world of spiders (internet crawlers, search engine powers that be and figuring out how to make it post FASTER then 5 hours!)

What I mean is this.  I post to my BLOG and 5 hours later google finds it?

Whats up with that?

I’m trying to figure out a way to get it in less than an hour.

Once I discover the secret (if at all possible) I shall share my wisdom with the world :)

I googled spiders for a joke and found this cool pic!

then that little tune I used to sing in grade school popped into my head
