In this video, Betty demonstrates how to make her *Extra Sloppy* Sloppy Joes. A great combination of flavors, and it makes a complete meal!

Ingredients:

I lb. ground beef or hamburger (I use Laura’s Lean 4% fat ground beef.)
1 (about 1 oz.) McCormick sloppy Joe seasoning packet
6 oz. tomato paste
1.25 cups water
1 container prepared (or homemade) coleslaw
1 sliced large tomato
8 whole wheat sandwich buns

Brown the ground beef over low heat, stirring constantly, until crumbly and no pink is showing. Remove from heat and off any fat that has been cooked out. Sprinkle the sloppy Joe seasoning mix over the cooked ground beef. Then, add the 6 oz. tomato paste and the 1.25 cups water. Gently stir until these ingredients are combined. Now, cook this mixture over low to medium heat for about 10 minutes, until flavors are blended and the consistency is good for spreading. Pour the cooked sloppy Joe mixture into a serving bowl. Assemble your Extra Sloppy Sloppy Joe as follows. Spread the bottom half of the sandwich bun generously with sloppy Joe mix . Next, spread a layer of coleslaw on top of the sloppy Joe mixture. Now, add a large, thin slice of tomato. Cap it all off with the top of the sandwich bun. This makes a great alternative to a hamburger, and it adds in lots of vegetables, as well. It is sloppy, for sure, but scrumptious!

In this video, Betty demonstrates how to make her Super Submarine Sandwich. It is super-sized and super-good!

Ingredients:

1 loaf Italian bread (I got mine from the deli section of my supermarket. I used sun-dried tomato bread.)
8 oz. cream cheese, softened
2 cups shredded sharp cheddar cheese
8 sweet pickle slices (I used sweet pickle “stackers.”)
1/4 pound roast turkey (shaved)
1/4 pound honey ham (shaved)
1/4 pound roast beef (shaved)
3 slices sharp cheddar cheese
3 slices provolone cheese

Slice the Italian bread horizontally into two equal portions. Hollow out a good portion of the bread from the cut sides. (I save the removed bread for later use in other recipes.) Now, mix together 8 oz. cream cheese and 2 cups shredded sharp Cheddar cheese. Spread half of the mixture in one hollowed-out bread half, and the other half of the mixture in the other hollowed-out bread half. Place 4 large sweet pickle slices on top of each of the cheese spread bread halves. Now, on one of the bread halves (the one that will be the bottom), layer the following: 1/4 pound shaved roast turkey, 3 slices provolone cheese, 1/4 pound shaved honey ham, 3 slices Cheddar cheese, and 1/4 pound roast beef. Close up the super submarine sandwich, by placing the top half (which is spread with cheese mixture and topped with pickles) on top of the bottom layered half, completing the look of the loaf of bread. Slice serving pieces of this super submarine by slicing downward or diagonally, and place on a serving plate. This is a great sandwich for you to make for the whole family. You can vary the amounts and types of meats and cheeses–customize it to your own needs! Enjoy!!!

by the time New Years Eve comes around, most of us are exhausted from all our Christmas Parties.

I’ll be looking for some quick recipes for you to make and posting them here for your enjoyment for the next day or so.

In this video, Betty demonstrates how to make her popular “Casa Betty” Burritos. They are very easy to make, and are mouth-watering! Betty displays her burritos along with her Spanish Rice Ole! side dish–a *great* party meal!!!

Ingredients:

1 pound ground beef
1 teaspoon salt
1 small onion, finely chopped
1 clove garlic, minced
1/2 teaspoon ground cumin
15 oz. can refried beans
15 oz. can chili with no beans
1 package of 10 flour tortillas (I used 7″-size, and had enough filling left over to freeze for another package of 10 later.)
shredded sharp cheddar cheese (about 1 cup, or to taste)
cooking oil spray

Brown1 pound ground beef with 1 teaspoon salt, 1 small chopped onion, 1 clove minced garlic, and 1/2 teaspoon cumin, stirring continuously over low heat. When brown and crumbly, add a 15 oz. can of refried beans and a 15 oz. can of chili with no beans. Stir together thoroughly. Spoon equal amounts of meat mixture on each tortilla, roll tortillas, and place seam side down in a baking dish that has been sprayed with cooking oil. Sprinkle with about 1 cup shredded sharp cheddar cheese (more, if desired). Bake, covered with aluminum foil at 325 degrees for 10 minutes. Remove the foil, and bake 8 minutes longer without the foil. Change the oven heat to 400 degrees and turn to broil. Broil for about 2 minutes, or until cheese is beginning to brown on top. Serve with salsa (left over from the recipe and refrigerated) and restaurant-style fried tortilla chips, Betty’s Spanish Rice Ole!, sliced lettuce, diced fresh tomatoes, and fresh avocado slices–plus limeade to drink!

Note: These burritos may be frozen before baking. When you are ready to use them, just thaw them and bake as directed above. A very convenient and delicious party combo!!!

In this video, Betty demonstrates how to make delicious nachos that are great for entertaining–particularly for events like the Super Bowl. It takes less than 15 minutes for the entire preparation (cooking time: 10 minutes, or when cooked to your liking). Super quick and super easy for the Super Bowl!!!

INGREDIENTS:

1 bag restaurant-style tortilla chips
1 can (approx. 16 oz.) refried beans
1 can (approx. 16 oz.) chile without beans
1 bag (approx. 8 oz.) shredded cheese
1 carton (approx. 16 oz.) sour cream
1 jar (approx. 8 oz.) jalapeno slices
