Betty’s kitchen Coconut Cream Cheese Frosting for Red Velvet Cupcakes-VALENTINE’S DAY! ♥ REcipe Video

Betty demonstrates how to make Coconut Cream Cheese Frosting. This is a frosting to use on the Romantic Red Velvet Cupcakes, although it may be used on many kinds of cakes and cupcakes.

Ingredients:

8 ounces cream cheese, softened
½ cup butter, softened
½ teaspoon coconut extract
16 ounce box confectioner’s sugar (This is the same as powdered sugar or icing sugar.)
2 cups sweetened flaked coconut (You may use sweetened shredded coconut, if desired.)

In a large bowl, beat 8 ounces cream cheese on medium speed of an electric mixer until light and fluffy. Add ½ cup butter and beat into cream cheese until smooth. Add ½ teaspoon coconut extract, beating until blended. Gradually beat in one 16-ounce box of confectioner’s sugar until smooth. Stir in 2 cups sweetened flaked coconut. This will make about 4 cups of frosting and is enough to frost 2 dozen cupcakes. These are a great complement to Romantic Red Velvet Cupcakes in bettyskitchen, as well as many other types of cakes and cupcakes. Enjoy! Happy Valentine’s Day! Love, Betty ♥♥♥♥♥
