Betty’s Kitchen Romantic Red Velvet Cupcakes — VALENTINE’S DAY! ♥ Recipe Video

Betty demonstrates how to make Romantic Red Velvet Cupcakes. These cupcakes may be served plain or with a frosting of your choice.

I will be demonstrating my recommended frosting recipe in a couple of days. –Betty 🙂

¾ cup butter, softened
2 cups sugar
3 eggs
1-ounce bottle red food coloring
1 tablespoon vanilla extract
2 ¾ cups all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups buttermilk

Use an electric mixer on medium speed to beat ¾ cup butter until light. Gradually add 2 cups sugar and beat with the butter until mixture is light and fluffy. Add 3 eggs, one at a time, beating after each addition. Add a 1-ounce bottle red food coloring and 1 tablespoon vanilla extract and beat until smooth. In a large bowl, whisk together 2 ¾ cups all-purpose flour, ½ cup unsweetened cocoa powder, 1 teaspoon baking powder, 1 teaspoon baking soda, and ½ teaspoon salt.

Add flour mixture to butter mixture, alternately with 1 ½ cups buttermilk, beginning and ending with the flour mixture. Beat at low speed after each addition, just until blended. Spoon batter into muffin tins that have been lined with paper liners, filling each about 2/3 full. Bake at 350 degrees (F) for about 15 minutes, checking occasionally to see if a toothpick inserted in the deepest part comes out clean.

Remove from oven and place muffin tins on cooling racks. Allow to cool about 10 minutes in the muffin tins, then remove them from the tins and allow them to cool on racks. Serve plain or frosted with your favorite frosting. I will be uploading a frosting to accompany these cupcakes in a couple of days. I hope you enjoy the cupcakes and the (upcoming) frosting! Love, Betty ♥♥♥♥♥
