Betty’s Kitchen Corned Beef Sandwich Bake for St. Patrick’s Day Recipe Videos


Betty demonstrates how to make Corned Beef Sandwich Bake. This is a very easy and economical dish that you can serve with Scalloped Cabbage to commemorate St. Patrick’s Day.


2 ¼ cups biscuit mix (Bisquick)
milk, as required by Bisquick instructions
(2) 12-ounce cans corned beef, chilled
3 tablespoons mayonnaise
3 tablespoons prepared yellow mustard
6 slices mild or sharp cheese
1 large slicing tomato
small amount of melted butter

Prepare biscuit mix according to package instructions, using a proportional amount of milk. Knead on a floured surface. Flatten biscuit dough and place in an ungreased baking dish (approximately 8-inches by 12 inches). Use your fingers to pat the biscuit dough to cover the bottom of the baking dish, extending about an inch up each side. Now, remove the chilled corned beef from cans. Scrape off any excess fat and discard.

Slice the corned beef from the 2 cans into 8 roughly equal slices. Place the 16 corned beef slices in baking pan, covering the biscuit dough in the bottom. (I make 4 stacks of 2 along each side.) Mix 3 tablespoons mayonnaise and 3 tablespoons prepared yellow mustard and spread over top of corned beef slices. Bake at 425 degrees for 15 minutes. Top with cheese slices. (I put 3 cheese slices down each side.)

Cover the top with thin slices of 1 large tomato. Brush melted butter on top rim of browned biscuit crust. Return to oven and bake for 5 minutes. Remove from oven and serve immediately. Enjoy! Happy St. Patrick’s Day!!! –Betty 🙂
