Betty’s Kitchen Kentucky Rice Pudding — Mother’s Day Recipe Videos

In this video, Betty demonstrates how to make Kentucky Rice Pudding. This is flavorful dish that is great to serve with dinner or to have as a snack!

Ingredients:

6 cups milk
2/3 cup uncooked white rice
1/3 cup sugar
1 tablespoon vanilla extract
¾ teaspoon salt
toasted nuts, optional (I used toasted sliced almonds.)
dried fruit, optional) (I used a combination of dried cherries, dried blueberries, and golden raisins.)

Combine all ingredients (except nuts and fruit) in a large, heavy pot. Bring to a boil over medium heat. Reduce heat to low, cover pot with lid that fits, and cook for 15 minutes.

Remove lid from pot and continue to cook, stirring often, until rice is tender and sauce has thickened somewhat. This will take about 15 additional minutes. Remove from heat and let cool for about 5 minutes.

Ladle into a nice serving bowl. Cover and refrigerate 4 hours or up to overnight. When ready to serve, sprinkle a few toasted nuts in the center of the top, as well as some dried fruit. Delicious! –Betty 🙂
