Betty’s Kitchen Parmesan Creamed Spinach — Mother’s Day ✿REcipe Videos

In this video, Betty demonstrates how to make Creamed Spinach. This is a lovely way to serve spinach as a side dish on your dinner table.

Ingredients:

½ cup butter
2 cups whipping cream (I used 1 cup whipping cream and 1 cup of skim milk.)
2/3 cup shaved (or shredded) Parmesan cheese
½ teaspoon salt (I found this amount of salt to be more than I liked. You may decrease the salt to ¼ teaspoon or leave it out entirely.)
½ teaspoon ground nutmeg
½ teaspoon freshly ground black peppercorns
18 ounces fresh spinach, coarsely chopped
½ cup additional shaved Parmesan cheese
½ cup toasted pine nuts

Place ½ cup butter and 2 cups whipping cream (or substitute) in a very large saucepan or Dutch oven. Bring to a boil over medium-high heat. Reduce heat to medium-low and cook, stirring often, until somewhat thickened. This will take about 15 minutes. Stir in 2/3 cup shaved Parmesan cheese, ½ teaspoon salt (or less), ½ teaspoon ground nutmeg, and ½ teaspoon freshly ground black pepper. Add 18 ounces fresh spinach and cook over low heat, stirring often, 3 minutes or until spinach has wilted. Ladle into a nice bowl or soup tureen. Place ½ cup additional shaved Parmesan cheese in the center of the hot Creamed Spinach and sprinkle ½ cup toasted pine nuts on top. Serve immediately. Scrumptious!
