Betty’s Kitchen Traditional Southern Congo Squares — Mother’s Day ✿ Recipe Videos

In this video, Betty demonstrates how to make Traditional Southern Congo Squares. This is a recipe that has been around a long time. It is tried and true!


2 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
2/3 cup butter
2 ¼ cups firmly packed light brown sugar
3 eggs
2 teaspoons lemon juice
1 cup chopped pecans
1 cup semisweet chocolate chips

In a medium-sized bowl, combine 2 ½ cups all-purpose flour, 1 ½ teaspoons baking powder, and ½ teaspoon salt. Set aside. In a large saucepan, melt 2/3 cup butter over low heat. Remove from heat and stir in 2 ¼ cups brown sugar. Add 3 eggs, one at a time, stirring well after each addition. Stir in 2 teaspoons lemon juice. Add flour mixture, 1 cup chopped pecans, and 1 cup semisweet chocolate chips, stirring well. Spread mixture into 13-inch by 9-inch by 2-inch Pyrex baking dish or baking pan. Bake at 350 degrees (F) for approximately 20 minutes, or until a toothpick inserted in the deepest part comes out clean. Do not overbake. Cool in baking dish on cooling rack for 2 minutes. Cut into 1 ½-inch squares. Let cool completely in dish on cooling rack. Transfer to a nice serving dish. Enjoy! Love, Betty ♥ ♥ ♥ ♥ ♥
