In this video, Betty demonstrates how to make Healthy Blender Banana Ice Cream. This ice cream is made mainly from bananas, with some healthy flavor enhancers.

4 ripe bananas, peeled, sliced, and frozen solid
¼ cup toasted, finely chopped pecans
1 tablespoon honey
pinch of coarse sea salt
1 teaspoon almond extract
2 additional tablespoons honey
sprig of fresh mint for garnish

Prepare 4 ripe bananas at least 1 day ahead by peeling them, slicing them into rounds, and freezing them on a tray lined with parchment paper. After 1 day, the frozen banana slices may be transferred to a Ziplock bag until ready to make ice cream.

In a small bowl, combine ¼ cup toasted, finely chopped pecans, 1 tablespoon honey, and a pinch of coarse sea salt. Set aside. Place frozen banana slices, 1 teaspoon almond extract, and 2 additional tablespoons honey into the bowl of a blender. Blend until desired consistency, occasionally scraping down sides of blender with a spatula. If the mixture is very stiff, you may blend in a small amount of milk.

Use an ice cream scoop to shape ice cream into desired servings. Place scooped ice cream into sherbet glasses. Sprinkle top with reserved pecan, honey, and salt mixture. Garnish with a fresh sprig of mint. This is a healthy dessert that will be a hit with almost everyone! –Betty ♥
