Betty’s kitchen Mudhen Bar Cookies How to Recipe Videos

In this video, Betty makes Mudhen Bar Cookies. This is a traditional Southern treat.


½ cup butter
1 cup sugar
2 eggs (divided)
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon vanilla extract
1 cup chopped pecans (or nuts of your choice)
1 cup brown sugar

In a large bowl, cream ½ cup butter with 1 cup sugar. Add 1 egg and 1 egg yolk and mix well. In a separate bowl, combine 1 ½ cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Stir dry ingredients into creamed mixture.

Add ½ teaspoon vanilla and mix well. Spread evenly in a 13-inch x 9-inch x 2-inch baking pan that has been sprayed with cooking oil spray. Sprinkle top with 1 cup chopped pecans.

In a small to medium bowl, beat remaining egg white until frothy. Add 1 cup brown sugar, gradually, and beat until stiff peaks form. Spread over nuts.

Bake at 350 degrees (F) for 20 to 30 minutes, or until top is beginning to brown, and a toothpick inserted in the deepest part comes out clean. For best results, let cool completely, and then cut into bars. Place on a nice serving plate. These are absolutely delicious! I hope you enjoy them! –Betty 
