In this video, Betty demonstrates how to make Rainbow Frosting to go on the Rainbow Birthday Cake in the previous video. The cake is a 4-layer cake, each layer having a different bright color and is intended for Betty and Rick’s son-in-law, Chris, for his birthday. The frosting for this cake will use the same 4 colors as the cake layers.

Ingredients:

2 cups milk
5 tablespoons cornstarch
2 cups butter
2 cups sugar
4 teaspoons vanilla extract
4 different gel paste food colors (preferably the same ones used on the Rainbow Cake—blue, green, yellow, and red) I used Americolor gel paste.

Mix 2 cups milk with 5 tablespoons cornstarch and cook over medium-low heat until thickened, stirring constantly. Set aside to cool. Whip 2 cups butter, 2 cup sugar, and 4 teaspoons vanilla until fluffy.

Add cooled milk and cornstarch mixture, and whip again, until fluffy. Apportion most of frosting equally into 4 medium bowls. There will be about 20 ounces of frosting in each bowl, with a little extra frosting left in the mixing bowl for trimming the cake. Now, use 4 separate gel paste food colors to color each apportionment of frosting with separate colors, obtaining an intense, bright color for each apportionment.

Spread frosting on Rainbow (or other) Cake, and trim, as desired. Enjoy! –Betty ♡♥♡♥♡
