Betty’s Kitchen Green Beans with Parmesan-Pine Nut Topping — Thanksgiving REcipe VIDEO

In this video, Betty demonstrates how to make Green Beans with Parmesan-Pine Nut Topping. This is an easy way to dress up green beans for your holiday table.

Ingredients:

1 pound fresh green beans, strings removed and ends cut off
water for cooking green beans
¼ cup fresh flat leaf parsley, chopped finely
2 cloves garlic, minced
¼ cup pine nuts, toasted
zest of one lemon
¼ cup shaved Parmesan cheese (You may use grated or shredded Parmesan cheese.)
1 ounce extra virgin olive oil
¾ teaspoon table salt, or to taste
¼ teaspoon ground black pepper, or to taste

Place water in a Dutch oven a little more than half the way up. Cover with lid and bring water to a boil. Add green beans and return to a boil, covered. Cook for 3 minutes, or until green beans are crisp-tender.

While green beans are cooking, fill a large bowl halfway full with ice and cold water. When beans are done, drain through a colander and immediately plunge the drained green beans into ice water.

Stir green beans and ice water until green beans are cooled completely. Drain green beans and pat dry with paper toweling. Set aside.

In a medium-sized bowl, mix together parsley, garlic, toasted pine nuts, lemon zest, and Parmesan cheese. When ready to serve, heat 1 ounce olive oil in the previously used Dutch oven and add cooled green beans. Cook for 2 minutes, tossing occasionally.

Remove from heat when green beans are heated through and coated with oil. Place green beans on platter. Top with Parmesan-Pine Nut Topping. Sprinkle with salt and pepper, to taste. Serve immediately. I hope you enjoy these Green Beans with Parmesan Pine Nut Topping!! –Betty 🙂
