Betty’s Kitchen Ice Cream Muffins — Thanksgiving Recipe Videos

In this video, Betty demonstrates how to make Ice Cream Muffins. These are delicious muffins that may be made with as few as 2 ingredients. I am placing these muffins on my Thanksgiving table, because they are fairly unique and also very easy!


2 cups self-rising flour
2 cups softened vanilla ice cream
Optional ingredients:
1 egg, well beaten
2 tablespoons vegetable oil

Place flour and ice cream in a large mixing bowl. Beat until smooth. Fill well-buttered and floured muffin tins 2/3 full. Bake at 425 degrees (F) for about 10 minutes. (Watch carefully, because these muffins brown very fast.) For a richer muffin, add the egg and vegetable oil and mix again after adding. This makes 12 delicious muffins. Enjoy! –Betty 🙂
