In this video, Betty demonstrates how to make Cheese Pastry Puffs for Christmas. These are great when filled with Holiday Turkey Salad and served as an appetizer.

¼ cup butter
½ cup water
½ cup all-purpose flour
pinch of salt
2 eggs
½ cup shredded Swiss cheese

In a medium-sized pot, place ¼ cup butter and ½ cup water. Bring to a boil while stirring with a wooden spoon. Add salt and flour to the butter/water mixture.

Stir briskly over medium heat, until mixture forms a ball and leaves the sides of the pot.

Remove from heat and cool 3 minutes. Add eggs, 1 at a time, beating well after each addition.

Beat until dough is smooth. Stir in cheese. Use a 1-teaspoon scoop to form balls of dough, placing each in a shallow baking pan lined with parchment paper.

Bake at 400 degrees (F) about 14 minutes, or until puffed and golden. Remove from oven and pierce each pastry puff with a knife to allow steam to escape. Cool pastry puffs completely on wire racks. When ready to serve, cut tops off pastry puffs and fill with turkey (or other) salad.

Replace tops and arrange on an appetizer tray. This appetizer is gorgeous and luscious—and it will be a terrific way to use leftover turkey (and other meats)! I hope you enjoy this recipe! –Betty ♡♥♡♥♡
