In this video, Betty demonstrates how to make Holiday Turkey Salad. This is a great way to use turkey or chicken leftover from a holiday meal.


¼ cup sliced almonds, toasted
½ cup mayonnaise
1 teaspoon lemon juice
¼ to ½ teaspoon salt (or to taste)
dash of ground black pepper
2 cups finely chopped cooked turkey (either white or dark meat or a combination)
¼ cup finely chopped celery
2 tablespoons finely chopped green onion tops
1 tablespoon diced pimiento, drained

In a medium-sized mixing bowl, stir together almonds, mayonnaise, lemon juice, salt, pepper, turkey, celery, green onions, and pimiento. Transfer to a nice serving bowl. Cover with plastic wrap and refrigerate until ready to serve. This turkey salad is quite versatile and can be spread on bread for sandwiches, served on lettuce leaves, or used as a stuffing for pastry puffs—all delicious! Enjoy!!! –Betty 🙂
