Betty’s Kitchen Cherry Pecan Bread — Valentine’s Day Recipe Video Youtube

In this video, Betty demonstrates how to make Cherry Pecan Bread for Valentine’s Day. This is a quick and easy bread to make, and it looks very elegant when served as part of a romantic meal.


1 (4-ounce) bottle maraschino cherries, drained (reserving cherry juice)
1 egg
1 cup sugar
2 tablespoons melted butter
¼ cup cherry juice (from bottle of maraschino cherries)
¼ cup orange juice
¼ cup water
2 cups all-purpose flour
1 tablespoon baking powder
¼ teaspoon baking soda
¾ teaspoon salt
1 cup chopped pecans
cooking oil spray

In a large bowl, beat egg with electric mixer on high speed. Chop drained cherries and stir into beaten egg. Stir in sugar and melted butter. Add cherry juice, orange juice, and water.

In a separate bowl, mix together flour, baking powder, baking soda, and salt. Add flour mixture to liquid mixture. Beat well on medium speed of electric mixer.

Stir in chopped pecans. Pour batter into a standard loaf pan that has been sprayed with cooking oil spray. Bake at 350 degrees 40 minute to 1 hour, using a pick to test for doneness. Let Cherry Pecan Bread rest in pan for 5 minutes on a cooling rack. Remove from pan, slice, and place on a nice serving platter. Serve warm or at room temperature.
