Betty’s Kitchen Irish Potato Casserole — St. Patrick’s Day Recipe Video

Betty demonstrates how to make an Irish Potato Casserole. This is a great side dish for a St. Patrick’s Day meal.


6 medium potatoes, peeled, boiled to crisp-tender stage, drained, and chilled (I used Russet potatoes.)
¼ cup butter, melted
2 cup finely shredded Cheddar cheese
2 cups sour cream
1/3 cup sliced green onion tops
1 teaspoon salt
¼ teaspoon ground white pepper
2 additional tablespoons butter, melted

Grate chilled, cooked potatoes into a large mixing bowl. Set aside. Combine ¼ cup butter and shredded Cheddar cheese in medium saucepan over low heat, stirring occasionally, until cheese is almost melted.

Remove from heat and gently blend in sour cream, green onions, salt, and white pepper. Pour over grated potatoes. Fold in gently. Turn mixture into a 2-quart casserole dish.

Drizzle 2 tablespoons melted butter evenly over top. Bake at 350 degrees (F) for 45 minutes, or until golden and crusty on top. Remove from oven and serve immediately. YUM! This is one of my favorite potato casseroles! I hope you love it! Love, Betty ♥__☆__♥
